Chicken, Apple, and Cheddar Salad with Creamy Balsamic Dressing

Since my last post was for a cheesecake, I am going to ameliorate the damage done to your resolution with a lovely salad. Although I tend to describe things, especially food, as “lovely” often, I use the adjective for this salad because it is a nice, one-bowl salad dinner that will actually fill you up and curb your desire for a side plate of bread, grilled cheese, or leftover cheesecake.

Chicken, Apple, and Cheddar Salad

For the salad, you will need: 
  • 3 cups salad greens (I like mixed greens with arugula and baby spinach)
  • 1 cup diced, cooked chicken breast
  • 1/2 cup dried cranberries 
  • 3/4 cup cubed sharp Cheddar
  • 1 Granny Smith apple, finely chopped
  • 2 green onions, diced
  • 3 tablespoons toasted walnuts
Mix all of the ingredients in a large mixing bowl, tossing gently to combine. I tried to make the slices of chicken, apple, and cheddar roughly the same size. Serve with the creamy balsamic dressing recipe that follows. Here’s how my salad looked prior to plating: 

Creamy Balsamic Dressing

For the dressing, you will need: 
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. extra virgin olive oil 
  • 1 tbsp. light mayonnaise 
  • 1/2 tbsp. spicy course-ground mustard 
  • 2 tsp. lemon juice
  • Salt and pepper, to taste 
To make the salad dressing, whisk together the above ingredients, or add to a large Mason jar, tightly cap, and shake-shake-shake until they are combined. Make sure to shake just prior to serving as well, to  counter oil separation.
